Cream of Tomato Soup Recipe
Heat the olive oil in a large, deep stockpot over medium heat.
Add the onion and carrots and saute for 8-10 minutes, until tender.
Add the garlic and cook for 1 minute.
Add the tomatoes, tomato paste, basil, chicken stock, salt, and pepper and stir well.
Bring the soup to a boil, lower the heat, and simmer, uncovered, for 30 minutes, until the tomatoes are very tender.
Either using KOIOS immersion blender, blend until pureed.
Return to the pot, if applicable, and then add the almond milk and stir to combine.
Season to taste with any additional salt and/or pepper.
Pumpkin Spice Latte Recipe
In a small mixing bowl, combine the pumpkin puree, strong coffee, maple syrup, vanilla extract, cinnamon, nutmeg, cloves, allspice, ginger, and protein powder and mix well.
Use KOIOS immersion blender to make steamed milk without an espresso maker. Immerse the hand blender into the milk for about 20-30 seconds to allow milk to get a little bubble. Heat the milk in a microwave.
Set the microwave to high and let it run for 30-40 seconds until the milk starts to bubble up almost to the top of the jar.
Take care not to let the milk overflow the jar or to bubble too much and then fall flat.
Repeat these two steps (emulsifying and then heating) a second time until the milk is nice and frothy.
Pour the coffee-pumpkin spice into a mug.
Cauliflower Cheese Sauce
1. Heat the olive oil over medium-high heat in a skillet and cook the garlic until tender and fragrant, about 2 minutes. Careful not to burn. Remove from heat and set aside.
2. Add the cauliflower florets into a deep stockpot and then add the vegetable broth. Cover and cook over high heat for 8-10 minutes, or until the cauliflower is tender when it pierced with a fork. Do not drain.
3. Place the cauliflower florets to the bowl. Add 3/4 cup of the hot vegetable broth you used to cook the cauliflower, followed by the sautéed garlic and oil, sea salt, pepper, and almond milk.
4. Use the KOIOS blender to blend ingredients for 1-2 minutes until the sauce is very smooth. If the sauce is too thick, you can add equal parts almond milk and vegetable broth. You may have to do this in batches, depending on the size of your container. The consistency should be thick, but pourable.
5. Serve hot.
10 Minute Salsa Verde
Instructions
1. Preheat broiler to high and line a baking sheet with aluminum foil or parchment paper.
2. Place the tomatillos, jalapeño, poblano, and unpeeled garlic cloves on the baking sheet and place into the oven to broil for 5-10 minutes, or until nicely charred.
3. Transfer everything to a blender, along with fresh cilantro leaves, lime juice, and sea salt (don’t forget to remove the peel from the garlic).
4. Blend until smooth.
